Description of the One Day Cooking Lesson in Umbria
Arrival at the country farm for your cooking lesson.
Your cooking lesson begins at 10:00 a.m. and is 3 to 4 hours in length. The lesson is hands-on and includes the preparation of a multi-course meal and a meal with wine at the end of your lesson.
The Umbrian cuisine is incredibly rich and varied, famed for its heady olive oil; the wines are among the best produced in Italy.
Recipes vary according to the season, utilizing only the freshest ingredients available and providing you with a deeply individual Italian experience. The cooking lessons are great, the food sublime!
Typical appetizers include preparation of one of the following:
Bruschetta –Tomatoes and mushrooms;
Cake with zucchini, potatoes and taleggio cheese;
Mixed grilled vegetable with bread and garlic;
Rolled meat with wild herbs;
Spelt salad;
Salad with melon and ment;
Fried flower zucchini;
Torta al testo with ham and rucola;
Crostini with chicken liver;
Panzanella;
Frittate;
First Course often includes one of the following:
"Pasta" made by hand (Tagliatelle, strangozzi, maltagliati, pappardelle....);
Mixed pizza;
Gnocchi;
Ravioli;
Lasagne;
Rice;
Polenta;
Lentil soup;
Pasta and chickpeas;
Pasta and beans;
Soup with spelt;
Second Course often includes one of the following:
Umbrian Meatloaf with pine-nuts and dry grapes;
Turkey with wild herbs;
Pork and grapes;
Roast chicken;
Eggplant Parmigiana;
Vegetable often includes one of the following:
Salad with fennel and arugula;
Salad with fennel and orange;
Roasted potatoes;
Roasted mixed vegetables;
Grilled eggplant
Dessert often includes one of the following:
Crostata (with cream, fresh fruit and jam);
Tiramisù;
Macedonia (mixed fruit) with special cream;
Panpolenta with ice cream;
